Lime and Ginger Chicken Meatballs are the perfect addition to your weekly routine. Easy and Fresh; you won’t regret making this recipe
Ingredients
- 1 lb of organic, free ranged ground chicken
- 1 lime, juiced and zested
- 1 knob of ginger, grated
- 3 cloves of organic garlic, minced
- 1 green onion, sliced
- 1 bunch of organic parsley, chopped
- 1 pinch of volcano salt
- 1 pinch of ground pepper
- 1 tbsp of organic coconut oil
Instructions
- Preheat oven for
- Prep all ingredients
- zest and juice lime
- chop ginger, green onion and garlic
- In a large bowl, mix all the ingredients together
- Form the mixture into golf size balls
- Bake in oven, on a parchment paper covered baking sheet, for 30 minutes.
- When ready, pair the meatballs with coconut rice and veggies.
Notes:
- You can use ground turkey instead of chicken
- Substitute cilantro instead of parsley
