YUM YUM YUM YUM; the only words to describe this recipe
Ideal for meal prep and also the fact that all ingredients can be cook on a baking sheet all at once. The clean up is so easy!
Ingredients
- 1 ear of corn,
- 1 zucchini, chopped evenly
- 1 porc chop, medium sized
- 1/4 cup of heirloom tomatoes, sliced
- 1/4 cup of black beans
- 1/4 of cilantro
- 1 lime, juiced
- 1 cup of brown rice, cooked
Spice Blend
- 1/4 cup of Mexican Chilli Powder
- 2 tbps of apple cider vinegar
- 1/4 of olive oil
Lime Chipotle Yogurt Sauce
- 1/4 cup of greek yogurt
- 1/2 lime, juiced
- 1 tsp of chipotle powder
- 1/2 of Manuka Honey
Instructions
- Marinate pork
- On a baking sheet lined with parchment paper, lay the zucchini and corn and sprinkle Mexican chilli powder and as well lay the marinated pork chop
- While the veggies and protein are cooking, prep all the other ingredients
- rinse the black beans
- slice the tomatoes
- chop cilantro
- Make yogurt sauce
- When veggies and protein are done cooking, its time to plate.
- Start off with the rice, then add all the other ingredients to this fabulously delicious tasting meal
Notes
Do not feel forced to use pork – any protein can with stand the spice blend ! And for a vegetarian alternative (portobello mushrooms hold themselves great against the flavourful marinade)
