Mexican Pork Fiesta Bowl

YUM YUM YUM YUM; the only words to describe this recipe

Ideal for meal prep and also the fact that all ingredients can be cook on a baking sheet all at once. The clean up is so easy!


  • 1 ear of corn,
  • 1 zucchini, chopped evenly
  • 1 porc chop, medium sized
  • 1/4 cup of heirloom tomatoes, sliced
  • 1/4 cup of black beans
  • 1/4 of cilantro
  • 1 lime, juiced
  • 1 cup of brown rice, cooked

Spice Blend

  • 1/4 cup of Mexican Chilli Powder
  • 2 tbps  of apple cider vinegar
  • 1/4 of olive oil

Lime Chipotle Yogurt Sauce 

  • 1/4 cup of greek yogurt
  • 1/2 lime, juiced
  • 1 tsp of chipotle powder
  • 1/2 of Manuka Honey


  1. Marinate pork
  2. On a baking sheet lined with parchment paper,  lay the zucchini and corn and sprinkle Mexican chilli powder and as well lay the marinated pork chop
  3. While the veggies and protein are cooking, prep all the other ingredients
    1. rinse the black beans
    2. slice the tomatoes
    3. chop cilantro
    4. Make yogurt sauce
  4. When veggies and protein are done cooking, its time to plate.
  5. Start off with the rice, then add all the other ingredients to this fabulously delicious tasting meal



Do not feel forced to use pork – any protein can with stand the spice blend ! And for a vegetarian alternative (portobello mushrooms hold themselves great against the flavourful marinade)
