Ultimate Mediterranean Bowl

Ultimate Mediterranean Bowl is one of the easiest prep recipes on my blog. The prep consists of roasting chickpeas, making a simple tomato and parsley salad. You are able to prepare all the ingredients and store in separate containers. Whenever you are hungry, just grab and go


  • Zataar Roasted Chickpeas
  • Pitted Olives (from the deli at your local grocery store)
  • Hummus
  • Spinach (LOTS OF IT)
  • Simple parsley and tomato salad
  • Pre-made Falafel Balls (easy to warm)
  • Lemon wedges
  • Pita wedges
  • Hot Sauce



Zaatar Roasted Chickpeas 

  1. Open 1 can of chickpeas; drain and rinse
  2. In mixing bowl, add chickpeas, olive oil and zaatar spice
  3.  Place on baking sheet and bake for 15 mins at 325F
  4. When ready, remove from baking shee

Simple Parsley and Tomato Salad 

  1.  Clean veggies and chop them (parsley, onion
  2. Make sure they are all bite size and uniform pieces
  3. Dress with light red wine vinegar and a bit of olive oil
  4. Season with salt and pepper
