Jalapeno Parsley Pesto

It comes a time where your fresh herbs need to be eaten ASAP. There is no better solution than making a quick and easy pesto sauce.

I am totally addicted to my new Kitchen Aid food processor  that I got from my mom for Christmas.

  • 1 bunch of parsley
  • 1 jalapeno, diced finely (seeds included)
  • 1/4 cup sunflower seeds
  • 1 garlic clove
  • 1 tbsp of lemon juice
  • salt and pepper
  • 1/4 cup of extra virgin olive oil

  • Prep all ingredients
  • Add them to the food processor
  • Start it off on purée; slowly start adding the olive oil until smooth

How can you use it?

You are able to freeze the pesto for up to 1 month. I use the pesto on chicken, shrimp, pasta and veggies.

Keep an eye out for recipes which will feature this yummy and extra spicy pesto
