If you’re either working from home or at work; lunch is a busy time. You have either 30 minutes to an hour to eat and waiting in line is not ideal. I have come up with 3 easy lunch salads that are way to easy to prep and are awesome for all at home workers and if you work in an office.
Please note – I tried to keep these salads to under 10 ingredients be salad. (SOME REPEAT THEMSELVES) Here is the grocery list for all the salads:
- Spinach
- Yellow Pepper
- Cucumber
- Celery
- Feta Cheese
- Avocado
- Dill
- Green onions
- eggs
- Chicken
- shrimp
- Shredded Cabbage
- Broccoli
- Celery
- Romaine Lettuce
- Crispy Beans (sprouted beans)
I also use olive oil and balsamic vinegar as a dressing
Shrimp Spinach Salad

- Spinach (as your base)
- Goat Milk’s Feta Cheese
- Cucumber
- Yellow Pepper
- Fresh Dill
- Avocado
- Pan Seared Shrimp (simple lemon juice and olive oil
- OPTIONAL : Topped with sesame seeds and crispy onions
Healthy Fat Salad

- Romaine Lettuce (as your base)
- Cucumber
- Tomatoes
- Green Onion
- Shredded Purple Cabbage
- Hard boiled egg
- Avocado
- Sesame seeds
Yogurt Greek Chicken + Super Green Salad

- Romaine Lettuce (as your base)
- Yogurt Greek Roasted Chicken
- Broccoli Florets
- Crispy Beans
- Cucumber
- Celery
- OPTIONAL: Sesame Seeds and Crispy onions
