Sundried Tomato Pesto Scallop Squid Ink Pasta



  • 1 package of squid ink pasta (found mine at Trader Joe’s but all specialty health stores usually carry this)
  • 1 cup sundried tomato pesta
  • 1 garlic clove , minced
  • 1 package scallop (smaller size)
  • 1 tbsp roasted chilli paste
  • 1 cup roasted broccoli
  • 1/2 yellow onion, peeled and diced
  • 1/2 cup water
  • OPTIONAL: Nutritional Yeast and Scallions


  1. Get a pot of water boiling for the pasta
  2. In a saucepan, add olive oil and garlic/onions
  3. Once caramalized, add chilli paste, water and pesto
  4. When sauce has formed, add the scallops and roasted broccoli
  5. Let the sauce simmer until scallops are cooked
  6. When pasta is ready, mix the sauce and pasta together
  7. Top it off with nutritional yeast or scallions
