
Ingredients
- 1 package of squid ink pasta (found mine at Trader Joe’s but all specialty health stores usually carry this)
- 1 cup sundried tomato pesta
- 1 garlic clove , minced
- 1 package scallop (smaller size)
- 1 tbsp roasted chilli paste
- 1 cup roasted broccoli
- 1/2 yellow onion, peeled and diced
- 1/2 cup water
- OPTIONAL: Nutritional Yeast and Scallions
Instructions
- Get a pot of water boiling for the pasta
- In a saucepan, add olive oil and garlic/onions
- Once caramalized, add chilli paste, water and pesto
- When sauce has formed, add the scallops and roasted broccoli
- Let the sauce simmer until scallops are cooked
- When pasta is ready, mix the sauce and pasta together
- Top it off with nutritional yeast or scallions
