Cauliflower Shrimp Fried Rice

A healthy twist to a take-out classic   



  • 1 package Green Giant riced cauliflower and sweet potato
  • 1 lb frozen nordic shrimp (these are the best for fried rice)
  • 1/2 cup frozen peas
  • 2 scrambled eggs
  • 1/2 cup frozen corn
  • 1/2 cup shredded purple cabbage
  • 1 cup bean sprouts
  • 2 tbsp soy sauce
  • 1 tbsp chilli paste
  • 1 tsp sesame oil
  • 1 tsp ginger paste
  • Optional: Salt and pepper for seasoning


  1.  In a wok, add olive oil, chilli paste and ginger paste
  2. Add the riced vegetable mix, toss within the mixture
  3. Add the frozen peas and corn with the shredded cabbage
  4. Cook the vegetables down – add the eggs and the shrimp
  5. Add soy sauce and the sesame oil.
  6. Salt and pepper if you would like and top with srriracha sauce
