A healthy twist to a take-out classic

Ingredients
- 1 package Green Giant riced cauliflower and sweet potato
- 1 lb frozen nordic shrimp (these are the best for fried rice)
- 1/2 cup frozen peas
- 2 scrambled eggs
- 1/2 cup frozen corn
- 1/2 cup shredded purple cabbage
- 1 cup bean sprouts
- 2 tbsp soy sauce
- 1 tbsp chilli paste
- 1 tsp sesame oil
- 1 tsp ginger paste
- Optional: Salt and pepper for seasoning
Instructions
- In a wok, add olive oil, chilli paste and ginger paste
- Add the riced vegetable mix, toss within the mixture
- Add the frozen peas and corn with the shredded cabbage
- Cook the vegetables down – add the eggs and the shrimp
- Add soy sauce and the sesame oil.
- Salt and pepper if you would like and top with srriracha sauce
