The title says it all. A simple salad. The perfect side dish too any meal (brunch, lunch, dinner)
- 3 cups romaine lettuce (or your favourite leafy green)
- 1/2 cup goat cheese, crumbled
- 1 tbsp capers, drained
- 2 red pearl onions, thinly sliced
- 1 cup cucumber, sliced and halved
- 1 plum tomato, diced
- 1/4 cup olive oil
- 1/8 cup balsamic vinegar
- 1 tsp dried oregano
- salt and pepper to taste
- Prep all your ingredients. Slice, Dice, Wash, Measure and Crumble.
- In a large salad bowl, add the vinegar, olive oil, oregano and salt and pepper. Whisk until mixed.
- Add all your vegetables and capers
- Toss your salad and make sure it is coated with the dressing.
- Top with the goat cheese.
