It came to mind to create this recipe journal for all my loyal followers during this stressful time. Food has become such a primary aspect of our day-to-day life during the COVID-19 outbreak.
Isolation can take its toll on your mental and physical health but I find cooking to be such a great distraction during the day but you will also be able to discover and try new foods.
I will be updating this blog daily. Every day will have a recipe that I have made and a short journal message.
DAY 1: VEGAN HERB PESTO
(03/14/2020): In a time of panic, I’ve found cooking to be so relaxing. This is an easy recipe that you can prep ahead of time and put it on everything (in soups, fish/chicken and roasted veggies or as a past sauce

DAY 6: SIMPLE EVERYDAY SALAD
(3/20/2020) : Friday, I was keeping this simple. I was beyond stressed and finally the isolation was taking its toll on my mental health. Then I realized, that I have so lucky to have company during this time. My pup Archie has been keeping me motivated.
(03/21/2020): Feeling super lazy and had some frozen broccoli and cauliflower on hand. This recipe works with whatever frozen vegetable you have on hand!
DAY 8: CLASSIC MEAT SAUCE
(03/22/2020): CLASSIC MEAT SAUCE LOADED WITH VEGGIES 🍝 you can basically use this sauce for anything – your favourite pasta, lasagna, stuffed pasta etc. Packed with high fibre vegetables – you can make this sauce so easily and with a few recipe cheats and freeze it for future meal prep.
DAY 9: CARAWAY SODA BREAD
(03/23/2020) Weather in Toronto was brutal; it rained for most of the day! This time last year, I was in Ireland and I had the sudden urge to make some Soda Bread. Reminiscing about being on a train on my way to Belfast; exploring the green countryside, eating chowder and enjoying the amazing culture. This recipe is so easy for first time bakers. (3/24/2020) : I was craving something sweet! So I decided to make brownies. And there are none left. If you have brownie mix at home – this recipe is so easy to make.
(03/25/2020) : I am feeling a bit sick and started having a cough and with everything going on, I am expecting the worse. I decided to make this delicious quiche to get my mind off of things and it was my first time making pie crust.
DAY 12: BRAISED RED CABBAGE AND APPLE
(03/26/2020): Starting to feel a bit better and had left over cabbage in my fridge. Altered a bit of the original recipe from Martha Stewart! Omitted the sugar for some honey! Hope you all enjoy this recipe.
DAY 13: BLUEBERRY BANANA OATMEAL MUFFINS
(03/27/2020): Officially have been in self isolation for two weeks! Is it driving me crazy yet? No but I wish I could see people, having a dog has been life saving. Woke up this morning feeling great and decided to make this delicious recipe with the leftover buttermilk that I have at home. ENJOY ❤ and leave a comment to let me know if you’ve tried it.
DAY 14: MUSHROOM STROGANOFF
(03/28/2020) : Another classic with a twist. I have been trying to eat more plant-based recipes and I have never made stroganoff! Switched up the beef for mushrooms!
DAY 15: PEANUT BUTTER OAT COOKIES
(03/29/2020) : A rainy day recipe that’s quick and easy. Not your traditional peanut butter cookie but these are so tasty; you’ll be making them quite often during your self distancing 2020.
(03/30/2020) : Its’s the start of the third week of self distancing/isolation and I feel like it’s becoming the new norm. Here’s a delicious recipe for all those who have a huge sweet tooth!

I need to eat more of the veggies in my fridge so I threw everything together with a simple balsamic dressing and look what we have here…. A delicious flavour packed salad.

It’s so easy to make! If you have tortilla wraps on hands, these breakfast tacos are so easy to make! All you need is tomato, avocado, some cilantro and make your eggs the way you like them. It’s that simple! Hope you enjoy – xo Veronique

(04/20/2020): Black beans, sweet potato, peppers and onions are the base to this breakfast skillet. Pour your favourite eggs and add some sausage and this will be a fan favourite during brunch.

DAY 39 : SHEET PAN NACHOS
(04/22/2020) : There’s obviously not an exact recipe to make nachos. When I make them, I make sure to buy a quality tortilla chip. Next step is to layer the cheese. Layering cheese is key to having proper ratios. Top it off with your favourite toppings; I used olives, black beans, avocado, tomatoes, cilantro, greek yogurt and some mild salsa.
DAY 40: RAPINI & SAUSAGE PIZZA
(04/23/2020) : I got tired of ordering in so I decided to make my own pizza! So easy and you can use a few shortcuts; use your favourite sauce as the base (Alfredo, spaghetti, bbq – the list goes on) ; sautéed some rapini and sausage
TIP: bake your dough on oiled parchment paper – you’ll have a delicious crispy crust
DAY 41: SUNSHINE SMOOTHIE
(04/24/2020) : grab your blender and get the day started by making a smoothie. It’s a bit gloomy out today but this will put a skip in your step!
DAY 42: PEPPERS AND SAUSAGE
(04/25/2020) : If you know me, you know I am a huge fan of sausage and peppers with a tangy mustard. Will be posting the recipe to make the best sautéed peppers and onions.
