MY SOCIAL DISTANCING RECIPE JOURNAL

It came to mind to create this recipe journal for all my loyal followers during this stressful time. Food has become such a primary aspect of our day-to-day life during the COVID-19 outbreak.

Isolation can take its toll on your mental and physical health but I find cooking to be such a great distraction during the day but you will also be able to discover and try new foods.

I will be updating this blog daily. Every day will have a recipe that I have made and a short journal message.


DAY 1: VEGAN HERB PESTO

In a time of panic, I’ve found cooking to be so relaxing. This is an easy recipe that you can prep ahead of time and put it on everything (in soups, fish/chicken and roasted veggies or as a past sauce 


DAY 2: GOAT CHEESE AND PESTO FLATBREAD

DAY 3: SMOKED SALMON CREAM CHEESE BAGEL

DAY 4: ISOLATION VEGETABLE AND BEAN SOUP

DAY 5: MUSHROOM TACOS

DAY 6: SIMPLE EVERYDAY SALAD

(3/20/2020) : Friday, I was keeping this simple. I was beyond stressed and finally the isolation was taking its toll on my mental health. Then I realized, that I have so lucky to have company during this time. My pup Archie has been keeping me motivated.


DAY 7: CHILLI ROASTED BROCCOLI & CAULIFLOWER

(03/21/2020): Feeling super lazy and had some frozen broccoli and cauliflower on hand. This recipe works with whatever frozen vegetable you have on hand!


DAY 8: CLASSIC MEAT SAUCE

(03/22/2020): CLASSIC MEAT SAUCE LOADED WITH VEGGIES 🍝 you can basically use this sauce for anything – your favourite pasta, lasagna, stuffed pasta etc. Packed with high fibre vegetables – you can make this sauce so easily and with a few recipe cheats and freeze it for future meal prep.


DAY 9: CARAWAY SODA BREAD

(03/23/2020) Weather in Toronto was brutal; it rained for most of the day! This time last year, I was in Ireland and I had the sudden urge to make some Soda Bread. Reminiscing about being on a train on my way to Belfast; exploring the green countryside, eating chowder and enjoying the amazing culture. This recipe is so easy for first time bakers. DAY 10: PEANUT BUTTER AND WALNUT BROWNIES

(3/24/2020) : I was craving something sweet! So I decided to make brownies. And there are none left. If you have brownie mix at home – this recipe is so easy to make.


DAY 11: BROCCOLI, CHEDDAR AND FRIED ONION QUICHE

(03/25/2020) : I am feeling a bit sick and started having a cough and with everything going on, I am expecting the worse. I decided to make this delicious quiche to get my mind off of things and it was my first time making pie crust.


DAY 12: BRAISED RED CABBAGE AND APPLE

(03/26/2020): Starting to feel a bit better and had left over cabbage in my fridge. Altered a bit of the original recipe from Martha Stewart! Omitted the sugar for some honey! Hope you all enjoy this recipe.


DAY 13: BLUEBERRY BANANA OATMEAL MUFFINS

(03/27/2020): Officially have been in self isolation for two weeks! Is it driving me crazy yet? No but I wish I could see people, having a dog has been life saving. Woke up this morning feeling great and decided to make this delicious recipe with the leftover buttermilk that I have at home. ENJOY ❤ and leave a comment to let me know if you’ve tried it.


DAY 14: MUSHROOM STROGANOFF

(03/28/2020) : Another classic with a twist. I have been trying to eat more plant-based recipes and I have never made stroganoff! Switched up the beef for mushrooms!


DAY 15: PEANUT BUTTER OAT COOKIES

(03/29/2020) : A rainy day recipe that’s quick and easy. Not your traditional peanut butter cookie but these are so tasty; you’ll be making them quite often during your self distancing 2020.


DAY 16: PEANUT BUTTER AND CHOCOLATE MARSHMALLOW TREATS

(03/30/2020) : Its’s the start of the third week of self distancing/isolation and I feel like it’s becoming the new norm. Here’s a delicious recipe for all those who have a huge sweet tooth!


DAY 17: MEDITERRANEAN QUINOA SALAD

(04/01/2020): Happy April Fools! Still waking up thinking that this is just a dream. I have never made scones and found this recipe online and altered it based on the things I had on hand 🙂 ! Hope you enjoy; stay safe xo – Véronique

(04/06/2020): Kick off Week 4 of Isolation; I made this yummy and easy recipe from Martha Stewart! I linked the recipe here. You should have most of the ingredients in your pantry. I am really enjoying all this baking that I am doing lately. Such a great way to learn and improve my cooking skills.
