Summer Harvest Quinoa Salad

Grocery List

– 1 1/2 cup cooked quinoa
– 3 cups chopped kale
– 4 cherry tomatoes, quartered
– 1/8 cup dried cranberries
– 1/4 cup red onion, thinly sliced
– 2 apricot fruits, diced
– 1/4 cup fresh blackberries, halved
– 1/8 cup pumpkin seeds
– 1 cup roasted beets and sweet potato

DRESSING
A combo of maple syrup, Dijon mustard, olive oil and some balsamic


How to make it

1. Prep all your ingredients.
2. In a large bowl, add kale with 1 tsp of oil olive and toss with your hands (massaging the kale – makes it easier to eat)
3. After 15 minutes, add all your other ingredients and dressing and toss.
4. Serve with your favourite healthy fat or protein! I used avocado
