Spring Vegetable Egg Bake

Grocery List

  • 7 eggs
  • 1 1/2 cup milk (dairy free alternative will work)
  • 1/2 cup cheese, shredded
  • 1/4 cup chopped asparagus
  • 1/4 cup bell peppers and mushrooms
  • 1 tsp dried parsley or (fresh)
  • salt and pepper to taste

How to make it

  1. Chop all your vegetables
  2. In a mixing bowl, add the eggs and milk. Whisk together
  3. Add some salt and pepper and the parsley
  4. Pour mixture in a glass baking dish and top off with the veggies
  5. Bake at 350 F for 25-30 minutes
  6. Half way through the bake; top with the shredded cheese

Enjoy with toast or healthy fat such as turkey bacon or avocado!
